The crystallisation test: Raw honey crystallises naturally over time. If your honey has been sitting for more than a few months and is still perfectly liquid and clear, it has been processed to prevent crystallisation — which also destroys beneficial compounds.
The smell test: Raw Sidr honey has a distinctive floral, slightly woody aroma even when diluted in warm water. Processed honey has little smell once diluted.
